Our attention turns to the second part of the RnR culinary expedition. The snacks have been cleared and it is time for the entrée. Let us start by affirming our stance on what an entrée actually is.     Entrée in modern French table service - and for much of the English-speaking world - is a dish served before the main course of a meal. There are two other definitions that may be handy as you digest this epiosde.   Dégustation is the careful, appreciative tasting of various food, focusing on the gustatory system, the senses and high culinary art.
