Vanessa Kimbell is always an amazing guest and she has done such an amazing job in the last 20-30 years researching and studying along the side of many other scientists how to improve the environment and ecosystem that lives within us. The microbiome.
Today we have talked about the resources that are described into her new book, recently launched, called "The sourdough school Sweet Baking".
She says that she was tired to hear or read many people, saying that sourdough is good for our gut, without being done any study or scientific proves.
Now she has done the proper research, and the answers are either, free on her website, or now also on her new book.;
I have only 2 words to review this book that I have already had the honour to read. Which are "Astonishing awakening".
What a wonderful experience to be able to chat and interview Rachel co-owner of the Breadllama. Her and Jason ( her husband) have developed with the help of Shannon from Sourdough school house .com the wonderful tool that we see every day appearing on our Instagram. The tool I'm talking about is the blade holder that many of us are now using to slash or carve beautiful art pieces on top of our bread.
Rachel seems to be a very humble lady with a passion for nurturing her loved ones and sharing the love that she inherited from her grandmother, which is sourdough baking...

Paul Lebeau is an amazing man, an American man who now lives in Germany and looks after the managing and directing of a great company, the company we are talking about today is The Mockmill, the most modern stone milling machine for homes.
His experience started in developing medical devices and he took part in the launch of many other solutions and systems of preventions for the world of Medicine. He now works for this amazing company which produces amazing home or professionals stone milling devices.

It was a pleasure to interview this amazing sourdough creative baker, Hannah is an inspiration to all the bakers that are on the net, searching for advice. She is so dedicated to delivering to her audience the best ideas and recipe to utilize the sourdough fully.
I was totally impressed by some of her ideas, and I am sure that she has what it takes to conquer the world of baking. She really is an authority when it comes down to discard. I will definitely try the Pan de Sal.
She has started baking when she was very young, and she has mastered her passion thoroughly, but only since 2018, when she started baking sourdough, she got fascinated to share as much as she can and especially hor to utilize the "discard from the sourdough".

His philosophy is built on economical principals that in Galicia have been shared for hundreds of years. Good flour, high Hydration, and good fermentations are the main point of this way of baking bread with the "Masa Madre".

When I encountered Carlo, he was a very humble pizza chef, very creative and very concentrated on his job. I knew he had something special, he was gifted with many talents such as creativity, determination, leadership but above all, he was aware of his surroundings.
Now I can see why he was looking at every single detail when he was working with me.
