If you haven’t heard of oat flour, you probably live under a rock. Over the last decade or so, oat flour, has become a lot more readily available, and there have been a lot more recipes that call for it. It is very popular to use for people who are avoiding gluten out of a lifestyle choice or those who have a gluten intolerance or celiac disease. However, oat flour is not something that can always replace your regular weight, all purpose flour. It can be finicky. This podcast episode will explain to you what oat flower is, how you can make it at home, the difference between store-bought oat flour, and homemade oat flour, and how to use oat flour in your home baking.

What You'll Need:
-2 oz. Instant Espresso Powder
-1 cup brown sugar, packed
-1 box instant butterscotch pudding mix (4 serving size, regular or sugar-free)
-1 (8 oz) bag crushed English toffee pieces (plain or with milk chocolate coating)
-2 cups powdered milk ( https://amzn.to/4gLZHUl )*
-1/2 cup powdered French vanilla non-dairy coffee creamer
-1/4 cup Dutch-processed cocoa powder
What You'll Do:
1. In the bowl of a large food processor, pulse the espresso powder, brown sugar, pudding mix, and toffee pieces until ground to a fine powder.
2. Add the rest of the ingredients, pulsing and scraping down the sides of the bowl, as needed, until mixture is completely uniform.
For Your Gift Recipient:
Add 2 Tablespoons of mix to a mug. Stir in 8 oz. of boiling water. (For each cup of water, use 2 T. mix - or more if desired)

-1/2 cup French vanilla flavored powdered non-dairy creamer
-1 teaspoon ground ginger
-1 teaspoon ground cinnamon
-1/2 teaspoon ground cloves
-1/2 teaspoon ground cardamom
-1/2 teaspoon of nutmeg
-1/2 teaspoon of allspice
-1/8 of teaspoon white pepper
What you’ll do:
1. Combine sugar, instant tea, milk powder, nondairy creamer, and vanilla-flavored creamer in a large bowl. Stir in ginger, cinnamon, cloves, and cardamom.
2. Blend 1 cup at a time in a food processor or blender until a fine powder.

What you’ll need:
-6 oz bittersweet or semi-sweet chocolate (not chocolate chips)
-1/2 cup cocoa powder
-1 1/4 cup whole milk powder ( https://amzn.to/49VFOIb )*
-1 1/4 cup granulated sugar
-1 teaspoon fine sea salt
What you’ll do:
1. Using a sharp knife, shop your chocolate into small pieces. This makes the work a bit easier on your food processor.
2. Add the chopped chocolate, cocoa powder, and powdered milk to the food processor and process until smooth and no chunks of chocolate remain. Add the sugar and salt and process for 20 seconds.
3. Store the homemade hot chocolate mix in an airtight jar or container for up to 2 months.
For your gift recipient:
Warm milk in a saucepan with a bit of vanilla and whisk in hot chocolate mix to your desired taste (start with 2 to 3 tablespoons).

What you’ll need:
- 2 cups all-purpose flour
-1 1/2 tsp salt
-1⁄3 cup sugar
-2 tablespoons baking powder

-1 cup buttermilk powder (or powdered milk)
-2 1⁄4 cups yellow cornmeal
What you’ll do:
1. In a large bowl, whisk together all ingredients
2. distribute evenly between two quart-size jars
For your gift recipient:
-2 1/2 cups corn bread mix
-1 egg
-1 cup water
-2 tablespoons butter (melted), or oil
1. Preheat oven to 425. Lightly oil an 8-inch square pan or round cast iron pan
2. in a large bowl, combine all ingredients. Spread batter into pan 3. bake for about 25 minutes or until golden brown
*if using a cast iron pan, place a small amount of oil in the pan and place it in the oven while preheating; putting the batter into a hot cast iron pan helps to create a golden brown crust

Seasoned Oyster Crackers
- 11-16 oz. pkg. oyster crackers 1 pkg. dry Hidden Valley
- ½ c. oil dressing (original)
- ½ tsp. garlic powder 1 tsp. dill weed
Place crackers in a roaster. Combine oil, garlic powder, dill weed
and dry dressing mix. Add to crackers and stir until well coated.
Bake at 250º for 20 (I bake for 60) minutes, stirring occasionally.
***The above is the original recipe.
My mom doubles the topping (oil, garlic powder, Hidden Valley and
dill weed) and use 3 bags of crackers.

You're never too old to enjoy warm, creamy, cheesy mac 'n' cheese

What You'll Need:
-6 T butter, divided
-1/2 cup minced onion
-3 T flour
-2 3/4 c cold milk (I said 2 2/3 cup in the video…)
-1/4 tsp dried thyme
-pinch of nutmeg
-pinch of cayenne pepper
-salt and pepper to taste
-2 heaping cup of dried pasta
-8 oz shredded cheddar cheese
-4 oz shredded Gruyere (or plain Swiss), cheese
-2/3 cup bread crumbs
What You'll Do:
1. melt 4 T butter in medium dutch oven; add minced onion and sauté until onion is translucent (but not brown) 1a. put on a pot of water, to boil, for our pasta
2. stir in flour and cook for 2 minutes; whisk in cold milk; stir until the mixture comes to a simmer and thicken slightly
2a. once your pasta water comes to a boil, salt your water; add pasta and cook one minute less than al dente
3. turn off heat! stir in thyme, nutmeg, and cayenne; add in salt and pepper to taste; stir in shredded cheeses; preheat oven to 350 degree F
4. drain your cooked pasta; add it to your cheese sauce and mix well; if desired, melt the 2 remaining tablespoons of butter and mix in the bread crumbs - sprinkle evenly oven you mac n cheese
5. bake for 40-45 minutes, or until bubbly
6. enjoy!

What You'll Need:
- 2 T olive oil
- 2 pounds of chicken (I used thighs)
- salt and pepper
- 2 tbsp unsalted butter
- 8 oz sun-dried tomatoes in oil, drained
- 3 cups baby spinach
- 2 garlic cloves 
- 3 cups heavy cream (I used 1.5 cups whole milk and 1.5 cups cream)
- 1/2 tsp Salt
- 1/8 tsp black pepper
- 1 tsp Italian seasoning
- 1/2 cup Parmesan cheese
- 1/2 lb penne pasta
What You'll Do:
1. In a large skillet or sauté pan, add the olive oil, season the chicken with salt and pepper on both sides, and cook over medium-high heat 1a. set a pot of water on the stove, to boil, for our pasta
2. set the chicken aside to cool, then dice them up into cubes.
3. back in the pan sauté the butter, minced garlic, sun-dried tomatoes (oil drained, diced) and spinach over medium heat
4. once the spinach has wilted, add the milk/cream and let it come to a simmer
4a. once your pasta water is boiling, add pasta and cook according to direction on package
5. remove from heat and add the salt, pepper, Italian seasoning, and grated Parmesan cheese.
6. add your cooked hot penne pasta and cubes chicken back in. Give it a quick stir
7. serve and enjoy!
