Welcome to the ‘Plant Based Eating Made Easy’ podcast. I’m your host, Anna - a master’s level plant-based Registered Dietitian and Transition Coach - with 20 years of dietetics experience. I’m also the Founder of PlantNourished and an award-winning recipe creator. I’ve watched friends and close loved ones suffer and families torn apart by health problems like sudden heart attacks and cancer. Diabetes, high blood pressure, multiple cancer diagnoses, and heart problems all run in my extended family. And having gone through my own plant-based diet transition feeling lost with no guidance or support, I know just HOW challenging this transition can be – especially if you’ve been used to a ‘meat and potatoes’ diet for most of your life. But through my transition experience, I’ve now developed a simpler and easier method to move to plant-based eating – one that I can’t wait to share with you!

She had been trying to eat ‘clean keto’ and was feeling she had more energy with weight loss, and then a heart attack came out of the blue. Cindy was just a regular person on a regular Standard American Diet, living a quiet sedentary lifestyle. One based on frozen dinners and pre-packaged meals, along with sodas and sugary snacks, though she did try a ‘clean keto’ diet on and off. Are you new to plant-based eating and want to try more fruits and vegetables, but don’t know where to start or know how to enjoy them? You haven’t cooked with most of the veggies you’ve seen in the Fresh Produce department and have generally stuck to the same old familiar fruits you grew up on –like apples, oranges and pears – and haven’t ventured much farther. And some of the fruits you’ve seen being sold  seem to have strange shapes and colors…like those small squarish hard orange-colored fruit you’ve noticed lately at the store this Fall. What are they and what do they taste like?   Those, my Friend, are called Persimmons and there are a few KEY important things you need to know about them if you want to truly appreciate and enjoy them. Have you ever felt worried about starting plant-based first, because the rest of your family are meat-eaters? Maybe you’re worried that you’ll end up having to always eat differently, and be forever ‘double cooking’. If that’s you, I know how you’re feeling. But sometimes, you won’t know till you take that FIRST step forward…and sometimes the results can be amazingly beyond what we could have thought or imagined.   That was the case for my coaching client Dawn, who is part of a meat-eating family. And that’s why I’m sharing this segment of her testimonial interview with you today.   Not only was Dawn a full-time nurse, she was also a busy mama with a teenage son and 10-year-old twin daughters. And the whole family was used to a meat-heavy regular diet, especially her husband.
