Toss potatoes with oil, thyme, garlic, pepper and salt. Place standing each coin up on sprayed cookie sheet. Add extra thyme sprigs around potatoes. Roast 40-45 minutes. Serves 4. ***** Sweet Potato Soufflé (from listener Karen Lance) Casserole:3-4 medium sweet potatoes, peeled, cooked, and mashed1 cup sugar3/4 cup melted butter2 beaten eggs1 tsp cinnamon1 tsp vanilla1/4 tsp allspice1/3 cup milk Topping1/4 cup flour1/3 cup melted butter1 cup light brown sugar1 cup chopped pecans Mix together casserole ingredients and pour into oblong baking dish.Bake 15 minutes at 350, then reduce temperature to 300 and bake for 10 more minutes.Mix together ingredients for topping, add to the top of sweet potato mixture, and bake for another 15 minutes at 350. ***** Rita’s Clone of Cheesecake Factory’s Cheesecake This cake is so rich that I use a 9” pan. If you use an 8” pan, plan on baking a bit longer. An 8” pan makes thicker slices, and they look almost as high as Cheesecake Factory’s. The taste is so similar you wouldn’t be able to tell the difference!Crust:1-1/2 cups graham cracker crumbs1 tablespoon or so of sugar1/2 to 1 teaspoon cinnamon5 tablespoons melted butterMix until crumbly, not pasty. Pat into 9” springform pan going up the sides a bit. Set aside while making filling: Filling:1 pound cream cheese, room temperature1 cup sour cream1-1/4 cups sugar1 teaspoon vanilla3 tablespoons brown sugar15 oz canned pumpkin2 teaspoons pumpkin pie spice1/2 teaspoon cinnamon4 eggs, lightly beatenPreheat oven to 350. Beat cream cheese, sour cream, sugar and vanilla until smooth. Add pumpkin and spices and blend. Add eggs and blend until mixed. Pour into pan. Bake 40-45 minutes until center is almost set but still wobbly. Turn oven off but leave cheesecake in with oven door shut for 30 minutes more. This will finish the baking process and prevent a lot of “cracking” on top. Refrigerate several hours or up to 2 days to complete firming up of cheesecake. Garnish with whipped cream and nuts if you like. Serves 10-12. ***** Annie’s Family Bread Stuffing 3 Tablespoons chopped onion1/4 Cup butter4 Cups dry bread cubes (about 7 slices cut or torn)1/4 teaspoon salt1/4 teaspoon pepper1/2 teaspoon poultry seasoning1/2 teaspoon ground sage2-4 tablespoons water or chicken broth Cook onion in butter, combine with bread and seasoning. Through our Lord Jesus Christ, your Son, who lives and reigns with you in the unity of the Holy Spirit, God, for ever and ever. ***** RECIPES FROM RITA: MAKE AHEAD MASHED POTATOES “I like Russets, also known as Idaho (the origin of many Russet potatoes) or Yukon Gold or a combo of both.” “Both are high starch, low moisture, which means they can mash down easily. Yukon Gold gives a creamy, buttery, texture while Russets give a fluffier, lighter texture. Avoid waxy, low starch potatoes like red, new and fingerlings – they hold their shape after boiling and don’t absorb butter, cream, etc. well and that can result in a gluey texture.” Ingredients 4-5 pounds potatoes – Russets or Yukon Gold, peeled & cut into 2” chunks 8 oz regular cream cheese, cut up and softened 1 cup regular sour cream Butter Salt and pepper Instructions Place potatoes in large pot, cover with cold water an inch above the top. Add 2 teaspoons salt.  Bring to a boil, reduce to low, cover to keep a simmer until done, about 10-15 minutes. Drain and put back in pan on low. Make sure potatoes are pretty dry to make them mash up without getting gluey. Mash while still hot again so they don’t get gluey.  Add cream cheese and sour cream and blend well. Add salt and pepper. Pour into buttered casserole, cool, cover and refrigerate up to 2 days. Bring to room temperature and heat in 350 degree oven, tented with foil, until hot, about 40 minutes or so. Can also reheat in microwave.  More recipes at abouteating.com. ***** Vince Mastrangelo is online at legatus.org. Elizabeth Scalia is online at theanchoress.com. O my God, if in the past I have turned aside from You who are my Beginning, my End, and my supreme good; if I have turned toward myself and creatures, preferring their will and mine to Yours, I here and now promise to renounce, entirely and forever the world and myself, and to give myself wholly and forever to You.
