#36: Discussing Pediatric Obesity with Dr. Leigh Ettinger Dr. Leigh Ettinger joined the hospital staff at Hackensack University Medical Center in 2004 and began treating children affected by kidney disease and hypertension. He first learned about the plant-based diet in 2014 from a cyclist on Youtube! Going plant-strong gave him many benefits, including weight loss, improved blood pressure, lower cholesterol, and increased energy. His family and some of his patients joined him in this plant-based journey. In 2017, he joined the staff of the hospital’s outpatient pediatric weight management program to help families struggling with obesity. After many years of treating serious childhood diseases, he turned his focus to wellness and prevention. In 2021 he founded the Doctor Herbivore telemedicine practice to teach families how to thrive while eating plant-based, especially when there are weight concerns. He enjoys helping families successfully change course to a plant-strong path for their health, for the animals, for social justice, and for the environment. Michael C. Hollie, MD is a practicing physician board certified in Asthma, Allergy, and Immunology. He received his undergraduate degree from the College of Idaho. Dr. Hollie attended Loma Linda University School of Medicine in Loma Linda, California, and received his medical degree in 1985. He currently practices with The Allergy and Asthma Group of Galen in the Chattanooga, TN area. Today, we're preparing a plant-based peanut dragon bowl. This a way to get a beautiful variety of colors and textures in a nourishing and flavorful dish. Plus, you can easily adjust it for your family's needs! Spicy Peanut Sauce 1 cup natural crunchy peanut butter 1 cup water 3 Tbsp tamari, soy sauce, or coconut aminos 3 cloves garlic, minced 1 Tbsp fresh grated ginger 1 Tbsp hot chili sauce (adjust to your taste) 1/2 can (200ml) coconut milk (or other unsweetened, non-dairy milk) 2 tsp sesame oil 2 Tbsp lemon juice Prepare Sauce: Put peanut butter and water in a medium saucepan. Heat on a low temperature stirring until smooth and creamy. Add tamari, garlic, ginger, hot sauce, coconut milk, and sesame oil. Cook on low heat for 15 to 20 minutes, stirring occasionally. Remove from heat. Stir in lemon juice. Building the Bowl: Prepare optional toppings, steam vegetables, and assemble bowls. Mariquita Solis is a Vegan Empowerment Coach who helps vegans move from hopelessness and anger into peace and powerful advocacy. She has a weekly live stream show that features joyful vegans who are giving back to Mother Earth. Mariquita also handles the Community Management and Engagement for WeDidIt.Health, which is a community that shares the benefits of whole food plant-based living. Peter Goldstein is a former CEO of technology and software systems and a lifelong advocate of personal power and conscious practices. Rachael J. Brown earned her plant-based nutrition certification and food and sustainability certification from the T. Colin Campbell Center for Nutrition Studies and eCornell. After being diagnosed with high cholesterol in her late 20s, she discovered The China Study and started exploring the science of nutrition. After she ate WFPBNO for just 17 days, her cholesterol dropped 50 points. That was the beginning of her family’s journey from the standard American diet (SAD) to a whole-food, plant-based, no-oil (WFPBNO) lifestyle. A licensed practitioner of massage and the pain neutralization technique, Rachael is also a certified yoga and Pilates instructor and a spiritual director. She completed the 12-Day McDougall Program and has led corporate mindfulness seminars. She received her BA in geography from the University of Washington and has been an adjunct professor in nutrition and wellness. Rachael belongs to the University of Washington Alumni Association, the T. Colin Campbell Center for Nutrition Studies' Whole Communities program, and Eat for the Earth, as well as Plantstrong and McDougall communities. Rachael is happily married with two grown children. Maya Acosta is a co-leader of the Plant-Based DFW Pod located in Dallas, TX. For years Maya has been passionate about helping everyday people understand that they have the power to upgrade their health. Her outreach work first began at her husband’s vascular center. Maya formed the organization called PlantBased DFW where she and her husband Dr. Riz offered lectures, potlucks, documentary screenings, and walks with the doc in order to educate the community about the benefits of adopting a whole food plant-based lifestyle. Today, we were joined by Donna Meyer to discuss her experiences with lifestyle medicine and a plant-based diet. For most of Donna Meyer's nursing career, she has worked in an inpatient hospital setting in Southern WI. For most of those years, Donna was an Inpatient Cardiac Rehab nurse, educating patients and their family members about heart disease and its recovery, as well as cardiovascular disease risk reduction. Wanda Huberman was born in Virginia and spent much time on her grandparents' tobacco farm. Her parents moved when she was a child to Northeastern, Ohio where she was raised on a small family farm. She began to learn about a WFPB lifestyle when she met her husband, Mark Huberman in 1989 and she will tell you she is continuing to learn. Mark and Wanda married in 1991 and they have raised 3 daughters who are now all adults. She is the adoring grandmother of Madison who was born in July, 2021. Effective January 1, 2020, Wanda retired as a regional claims manager after 30 years in the casualty insurance industry to become the National Health Association’s full time Executive Director. Wanda has been attending NHA Conferences since 1991 and has personally managed sold-out Conferences since 2017 where her strong organizational and management skills have been on full display. Wanda is passionate about the rich history and legacy of the NHA and is anxious for more of the world to discover it. She is also thrilled to be planning Plant Based Travel thru the NHA and working on introducing the Health Science Podcast with Dr. Frank Sabatino as the host which will launch before the end of 2022. Karen's interest in nutrition, food, and health began early in her career as an early childhood educator/director and continued later as a speech-language pathologist for special needs children. Three years ago, she started attending Plant Based Nutrition Movement's (PBNM) monthly meetings. The information and support from those meetings were so motivating and valuable, and now she hopes to pass them on to others. Karen is currently one of the PBNM Cooking Coaches and has led some small cooking classes. Today, we were joined by Janet Pearson to discuss her plant-based journey. Janet was a Founding Board Member to Plant Based Nutrition Movement PBNM.org with the goal of bringing her experience to the southwest suburbs of Chicago where she resides and raised a family. This year she has been excited to be involved with the first pilot summer enrichment program for 6 Million SEEDS. Janet worked with the director of curriculum for a local elementary school district. Together they were able to partner, get others involved, and bring a plant-based nutrition program to 180 children ranging from K through 7th grade. Janet is currently part of the Terra Health Coaching team. She specializes in culinary nutrition. She is available to mentor clients or mentees specifically with recipes and prep ideas to make plant based doable in daily life. Today, we invited on Eloísa Trinidad to discuss her work fighting food insecurity. Eloísa is an award-winning policy advocate, liberation activist, educator, and artist. Her path toward activism and Veganism started early in life. She was raised by centenarians who lived off the land, taught her to be self-sustainable, and passed down much ancestral knowledge to her. This shaped her views of justice and empathy for all Beings, protection of our sacred home–Earth, and the belief in the healing power of plants, sharing, and community. As an AfroIndigeous Latina woman, she approaches liberation praxis and Veganism with an anti-colonial framework to raise awareness of how Western colonization has affected and continues to affect the plight of humans and beyond-human persons (animals). This week, we invited on PBNM directors John Gagliardi and Judi Bryan to discuss their reasons for going plant-based. Following his own health transformation, John’s goal is to educate and inspire others to do the same. John Gagliardi brings not only years of experience in traditional and new media, but also firsthand knowledge of the benefits of plant-based nutrition. In addition to creating and managing content for well-known catalogs and e-commerce sites, he has actively supported numerous non-profit organizations through his work with the Taproot Foundation, a volunteer organization that provides pro bono marketing services to NPOs. Following decades of eating the Standard American Diet (SAD) and experiencing a number of health issues and ballooning weight as a result, it came as a rude awakening when the documentary Forks Over Knives appeared in Judi’s queue on Netflix and she decided to watch. Not only did she choose to follow the dietary recommendations in the film, but one by one she saw her health issues vanish…and over the course of about a year, so did 85 lbs. A self-described “jack of all trades, master of none”, she’s been able to put in place and still manages the majority of systems we use at PBNM, both public-facing and internal. Transfer the blend to a shaker bottle or jar with a tight-fitting lid. Store in a cool, dry place.
