Melt the butter in a wide stainless steel skillet over medium heat. Swirl the pan a few times as the butter melts. It will get bubbly and then foamy – use a heat-proof spatula to scrape the butter across the bottom of the pan to prevent burning. You’ll see the butter start to turn golden brown very quickly, and you’ll be able to smell it (yum). When it is a nice golden brown color, remove from heat and transfer to a cool bowl or glass measuring cup, being careful not to burn it. The whole process should take about 5 minutes. Let the butter cool for another 5-10 minutes while you measure and prep everything else.Add the butter, sugars, and vanilla to the bowl of an electric mixer. Beat on medium high speed for 2-3 minutes.Add the eggs and beat for 1-2 minutes until shiny and smooth. Add the flour, baking soda, baking powder, and salt. Mix until just combined into a dense, shiny dough. Let the dough cool for 15-20 minutes (if you add the chocolate chips now, they will melt).Mix in the chocolate chips or chunks, pecans and coconut flakes (sometimes it helps to do this by hand). Let the dough rest for another 20-30 minutes. This helps hydrate the flour and carry the browned butter flavor farther in the cookies.Preheat the oven to 350 degrees. Roll or scoop your cookie dough into 3-tablespoon balls onto a baking sheet. Bake for 10 minutes, until the edges look cooked but the middles are still slightly soft and puffy

Pound the chicken breasts with a flat meat mallet, until they are about 1/4-inch thick. Put some flour in a shallow platter and season with a fair amount of salt and pepper; mix with a fork to distribute evenly. In a wide bowl, beat the eggs with 3 tablespoons of water to make an egg wash. Heat the oil over medium-high flame in a large skillet.Dredge both sides of the chicken cutlets in the seasoned flour, and then dip them in the egg wash to coat completely, letting the excess drip off. When the oil is nice and hot, add the cutlets and fry for 2 minutes on each side until golden, turning once. Remove the chicken cutlets to a large platter in a single layer to keep warm.Toss the lemon slices into the pan and cook for 1 to 2 minutes, until fragrant. Add the wine, broth, and lemon juice, simmer for 5 minutes to reduce the sauce slightly. Roll the butter in some flour and add it to the skillet, this will thicken the sauce. In a pan heat butter, olive oil, minced garlic until hot, place chicken in pan and cook for 3-4 minutes on each side (enough to brown).In a bowl whisk the 2 eggs, in another bowl combine the bread crumbs, panko, onion powder, garlic powder and oregano. Dip chicken in egg mixture then generously cover in bread crumbs mixture. Place chicken on greased cookie sheet, top with spaghetti sauce then top with cheese mixture. Save 1/2 cup of the water from the pot.Add remaining ingredients to a blender. After you remove husks and stems from tomatillos add them and the chilis to blenders and then add the water. Blend on high about 2 minutes.Enchiladas You can either use a rotisserie chicken or make your own. I place 2 large chicken breasts in a crock pot with, onion, juice of an orange and lemon or lime, salt, pepper, garlic clove, teaspoon ground cumin and 1/2 cup chicken broth and cook on high 3 hours. Shred when done.Add 1/4 cup mexican Crema or sour cream and 1/2 cup heavy cream to 1 cup of salsa. Prepare enchiladas by lightly dipping them in salsa, add 2 tablespoons chicken, roll and repeat. Add cream and lemon juice and return to boil. Then add Marsala and bring to a light boil.
