On today's episode of All in the Industry®, host Shari Bayer's guest is Dave Arnold, chef and inventor, and host of Cooking Issues on Heritage Radio Network, along with Nastassia Lopez. Dave is a creative force in the world of food and cocktails. He partnered with Momofuku to create Booker and Dax, a tech-heavy cocktail lounge. In 2004, he founded the Museum of Food and Drink (MOFAD) to promote learning about the history and culture of food. Liquid Intelligence, his book exploring the science behind cocktails, won the 2015 James Beard Award for Best Beverage Book and the 2015 IACP Jane Grigson Award. He currently co-owns Existing Conditions, a bar in Greenwich Village, and has co-hosted more than 350 episodes of HRN’s Cooking Issues. In her role as CEO, Clare works with the JBF staff and board of trustees in directing the strategic, programmatic, financial, and management operations of the James Beard Foundation. Prior to that, she worked at the BBC in the U.K. and U.S. where she was executive vice president of strategy and business development. On today's episode of All in the Industry®, host Shari Bayer's guests are Executive Chef Michael Anthony and Pastry Chef Miro Uskokovic of Gramercy Tavern, USHG’s contemporary, seasonal, award-winning American restaurant, which opened in in NYC in 1994 by restaurateur Danny Meyer, and is now celebrating its 25th anniversary. Michael joined Gramercy Tavern as the Executive Chef in 2006. Under his leadership, the restaurant has earned a three-star New York Times review (2007) and James Beard Awards for “Outstanding Restaurant" (2008) and “Best Chef: New York City" (2012). In 2015, Mike won the James Beard Award for “Outstanding Chef," a national recognition, and his book, V is for Vegetables, won the 2015 James Beard Award for Best Vegetable-Focused Cookbook. Miro grew up on a family farm in Serbia and moved to America after attending hospitality college. After working with a local pastry chef in Greentown, Indiana, Miro enrolled in the Culinary Institute of America. While completing his externship at Wallse, Miro had the chance to train as an intern at Jean-Georges. Miro became Pastry Sous Chef at Jean-Georges, and then went on to become Pastry Chef at Aldea. Miro joined Gramercy Tavern as Pastry Chef in 2013. On today's episode of All in the Industry®, host Shari Bayer's guest is Josh Emett, critically-acclaimed chef and restaurateur from New Zealand, who is the co-founder of Go-To Collection, which includes Rata in Queenstown, Madam Woo, and Hawker & Roll. For over 10 years, Josh worked with Gordon Ramsay. During his time at Restaurant Gordon Ramsay, the restaurant was awarded three Michelin stars, making it the only three-star restaurant in London. He went on to help open Claridge’s, reopen The Savoy, which then earned a Michelin star, and more. In 2006, Josh moved to New York City to oversee Gordon Ramsay at The London NYC, which was awarded two Michelin stars. In 2012, he opened his first New Zealand restaurant Rata with business partner Fleur Caulton, and since the pair have gone on to open 6 restaurants across New Zealand’s North and South Islands. Josh has appeared in the US edition of Hell’s Kitchen as a guest judge; competed, and won, on the Food Network’s Chopped; and is a MasterChef NZ judge. Josh also has a new cookbook, The Recipe: Classic dishes for the home cook from the world's best chefs. A graduate of the Culinary Institute of America, Scott’s career spans over 30 years, including multiple restaurants, an enthusiastic following of fans and an ever-expanding brand. He opened L’Impero in 2002, garnering a three-star review from The New York Times, the title of “Best New Restaurant” from the James Beard Foundation, and he was named one of America’s Best New Chefs in 2004, among other accolades. His current restaurants include Mora Italian in Phoenix, Arizona; and Italian steakhouse Cellaio at Resorts World Catskills in Monticello, New York; plus, he has his signature line of cooking and pantry essentials, Sprezza. Scott has appeared on the Today Show, The Chew, CBS’ The Talk and Good Morning America, and is a regular judge on Chopped, consistently one of Food Network’s highest rated programs. In May 2018, Best Baker in America premiered its second season on Food Network with Scott as the host.
