I favor London Ales also. Using S-04 that is hydrated with wort from the completed mash, I am getting excellent results 8 days in grain to glass. In fact, am now researching how to reduce the ABV so I can drink more at one sitting. 😊

It's so amazing to see how far the brewing industry has come with technology over the past few decades. Can't wait to get my hands on some LupoMAX hops and brew a batch
For chilling there are also diy builds where window or portable a/c units are disassembled and the placed into a cooler with a submersible pump with DI water and glycol. YouTube has several examples.
For bottlers that have a dishwasher, open it up and bottle on the inside of the front panel to avoid a mess on your floor.
