Contrails happen because the fuel is hydrocarbons. when burnt the H and the C combine with oxygen to make mainly H20 and CO2. Nothing to do with the fuel containing "a little bit of water" as your expert believes.

Sorry have to disagree that Bluesky is a poor experience on the phone. It's absolutely fine and improvements are being rolled out all the time. The main benefit of it is that it's a lively forum for civilised debate. Not a mad hellscape of paid for far right blue ticks. Twitter is in a tailspin while Bluesky is undergoing steady organic growth.
