We've been using Eight Sleep at the Kummer house for years, and in many ways it's been an incredible tool. The pod keeps the bed at exactly the right temperature through hot Georgia nights; lets us set different temperatures for falling asleep, the first half of the night, the second half, and waking up; and it tracks sleep, HRV, heart rate, respiratory rate, and even snoring. From a comfort and data perspective, we've genuinely loved a lot of what it can do. This episode isn't an endorsement, though. It's about why I've grown increasingly frustrated with Eight Sleep's dependence on constant WiFi and a stable internet connection. Here's the bottom line: if you turn off your home's WiFi at night – as we do, to avoid unnecessary EMF exposure – the system basically breaks. Cooling stops, you can't change the temperature, and if the adjustable base is up, you can't even put it back down. But even if you're not concerned about EMF exposure, the system's reliance on an internet connection is a major problem. For example, during recent internet and AWS outages, users couldn't control their beds at all – which is absurd for a product that's supposed to improve sleep. Eight Sleep's response to the AWS outage was to roll out a "backup mode" that lets the app talk to the pod over Bluetooth when cloud systems are down. That might help with outages, but it doesn't address the underlying issue that a sleep and health company keeps adding more wireless components around your bed. The latest generation even adds speakers and requires more communication between the base and the hub. We're in the middle of a move and I've decided we'll rip all of that out and stop using it. I still believe bed cooling is incredibly helpful in a modern, sealed house where airflow is limited, and I'll keep recommending the idea of bed cooling. But I'd rather use a simpler solution with less EMF exposure, even if that means losing automation, app control, and detailed sleep tracking. In the episode I talk through that decision, why I can't comfortably recommend Eight Sleep anymore, and what I'm looking for in a replacement. Coffee can be both a tool and a toxin, depending on how it's grown, prepared and used. In this episode, I take a closer look at caffeine and coffee through a practical lens — what science says, what I've experienced, and what really determines whether that morning cup helps or harms you. Caffeine blocks adenosine, which makes you feel less tired and can improve focus and performance. I've noticed that benefit myself when coffee happens to precede a workout, though I've also learned the hard way that more isn't better. Once, before a 100-meter race, I overdid it with caffeine pills and ended up jittery and nauseous — proof that even biohacks have limits. For most people, moderate coffee consumption can support alertness and provide antioxidants that are otherwise missing from a typical Western diet. But caffeine doesn't create energy — it just masks fatigue. It can raise cortisol, interfere with deep sleep, and build dependency if you rely on it to function. That's why I now drink coffee for the ritual and enjoyment, not as a crutch. My cutoff is late morning, around 10 or 11 a.m., because even if I fall asleep easily, caffeine too late still reduces slow-wave sleep and recovery. What's changed most for me is the kind of coffee I drink. Many conventional beans are contaminated with pesticides, glyphosate, mold, and mycotoxins such as ochratoxin A, which may be why some people feel worse after drinking coffee. A few days ago, Kathy asked me to listen to a parenting podcast by Dr. Becky that stopped me in my tracks. When Consumer Reports recently claimed that protein powders contain "high levels of lead," it sparked fear and confusion. In this episode, I break down what's actually going on, including how heavy metals end up in supplements, which types are most affected, and how to protect yourself without overreacting. Plant-based protein powders like rice, pea, soy and hemp often have the highest levels of contamination. These crops naturally absorb metals like arsenic, lead and cadmium from soil and water. And contamination can worsen during drying and processing because dust, machinery and open-air exposure add more pollutants. Plus, since powders are concentrated forms of food, the heavy metals in plants become concentrated too — right along with the nutrients. Animal-based proteins, by contrast, usually test cleaner. Grazing animals act as biological filters, and their tissues and milk contain far lower metal levels than the plants they eat. That's why whey or beef isolate powders generally have lower contamination levels than plant-based alternatives. It's also important to understand that the danger associated with heavy metals doesn't come from a single scoop. Rather, it comes from slow, cumulative exposure over years. Lead, cadmium and arsenic all build up in tissues and organs, increasing the risk of neurological, kidney and cardiovascular problems. So rather than panicking, your goal should be to minimize exposure wherever you can. A few weeks ago, I found myself driving home late after a long day of hauling gear to our new property — hungry, tired, and joking with Kathy that if we were a "normal" family, we'd just pull into a McDonald's drive-thru. Even the air on mountaintops isn't clean anymore. When you start connecting those dots, it's easy to think we're too far gone. But then you see small signs of progress: restaurants switching from seed oils to tallow, or major brands talking seriously about soil health, and you realize the tide might actually be turning. Europe tends to rely on top-down regulation to drive change, but here in the U.S., progress starts with individual choices. Businesses respond to demand. Every dollar we spend is a vote for the kind of food system we want. If enough people ask for better meat, for tallow-fried food, for products made without synthetic inputs, the market will adjust. That's already happening in small pockets, and it's proof that change doesn't have to come from policy — it can come from us. We didn't end up at McDonald's that night; we stopped at a barbecue joint that fries in tallow instead of seed oils. It wasn't perfect food, but it was progress (and worth supporting). When most people think about blood pressure, they think about a once-a-year reading at a doctor's office. But one measurement on one day doesn't tell you much about your cardiovascular health. Just like a single fasting glucose number doesn't reveal your metabolic state, a one-off blood pressure check is largely meaningless. Blood pressure fluctuates throughout the day based on stress, sleep, exercise, hydration, and countless other factors. And even more important: the cuff on your arm measures brachial pressure — not the central pressure your heart and organs actually experience. That distinction matters. The true risk isn't just the number on a cuff, it's how elastic your arteries are and how much pressure your aorta is under. Elastic vessels absorb the shock of each heartbeat, while stiff ones reflect it back toward the heart and raise central pressure. That's why arterial stiffness is such a strong predictor of cardiovascular risk, especially as we age or when diet and lifestyle accelerate inflammation and plaque buildup. In this episode, I explain how modern devices can go beyond a simple systolic/diastolic reading. Using pulse wave analysis, they can estimate central blood pressure, pulse pressure, augmentation pressure, augmentation index, and oxygen supply-demand balance in the heart muscle. I share some of my own readings — including cases where a cuff reading looked "high" but the deeper markers showed excellent elasticity and low central pressure. It's a reminder that context matters far more than one isolated number. The takeaway is clear: don't let a single reading define your health. Look at patterns over time. Pay attention to central pressure and vessel elasticity. I recently spent a week in Austria, bouncing between my grandparents' farmhouse and the alpine trails I grew up on. And it hit me how stark the contrast is between the foundation they built and the environment kids are growing up in today. My grandparents are 92 and 93, still living on their own. They had decades of clean food, pure alpine water, long days outside and zero WiFi. And then, over the last 10-20 years, an Americanized creep of seed oils, ultra-processed snacks and glyphosate started showing up in force. Fortunately, for my grandparents, their health trajectory was already set. But the sad reality is that today's Austria looks a lot more like the U.S. than the one I left in 2007. You see it in the soda cases and packaged snacks; in childhood obesity, which simply wasn't common when I was a kid; and in the push for convenience over quality. On paper, the cardiovascular stats are surprising, with heart issues accounting for about a third of Austrian deaths vs roughly a fifth in the U.S. But context matters. Life expectancy is higher in Austria, smoking remains far more prevalent, alcohol is a daily staple for many, and coding practices differ. And while European rules do more to keep out junk — i.e., no drug ads to consumers, tighter oversight of additives, a precautionary approach — you still find head-scratchers like the EU's renewed glyphosate approval, and the official dietary guidance in Austria is every bit as misguided as America's: more grains, less meat, avoid saturated fat. Meanwhile, the water story flips the other way; Austria's alpine spring water really is great, while here I won't drink unfiltered tap water. The throughline I keep coming back to is the environment. Austrians still walk and bike more, take real vacations and spend time outside. But the trend is heading in the wrong direction. My takeaway for both sides of the Atlantic is the same: don't wait for guidelines or brands to save you. Vote with your fork and your feet. Buy directly from farmers when you can. Filter your water. Create a home rhythm that makes movement and sunlight normal. Ignore food-industry talking points. And recreate the conditions humans have traditionally thrived in, focusing on better food, cleaner water and more time outside. If that resonates, start small this week. Audit what's in your pantry, pick one item you can swap for a simpler version, take your next meeting while on a walk, and move dinner earlier so your sleep isn't collateral damage. For years I thrived on two large meals a day – a late-morning breakfast after training and an early dinner. And the results spoke for themselves: stable blood sugar, excellent insulin sensitivity, low body fat, and plenty of energy. But I began noticing a drawback. Those evening meals, heavy in protein and fat, kept my digestive system working for hours after I went to bed, raising my heart rate, lowering my HRV, and occasionally causing acid reflux. Shifting dinner earlier didn't help much, and I wasn't hungry first thing in the morning, so forcing an earlier breakfast felt just as unnatural. In this episode, I break down why I've shifted from two meals to three, and what that change has done for my energy, recovery, and sleep quality. I walk through the benefits I saw from a two-meal pattern, the specific problems that crept in over time, and how spreading my daily protein and calorie intake across breakfast, lunch, and dinner has improved digestion, lowered nighttime stress on my body, and left me waking up more refreshed. The takeaway isn't that everyone should eat three times a day – or twice, or just once. It's that meal timing and frequency should fit your body's needs, your goals, and your lifestyle. The right pattern for you is the one that leaves you feeling and performing your best. For me right now, that means three balanced meals, each big enough to satisfy without overloading my digestion before sleep. For most of human history, survival depended on eating the foods that gave us the most nutrients with the least effort. That usually meant animals, which are dense in protein, fat, and bioavailable vitamins and minerals. But in recent years, we've been told that plants are the true superfoods. Raw kale in your smoothie? Spinach salads every day? The darker and leafier, the better, right? Not quite. In this episode, I dive into the real story behind plant-based foods and the antinutrients they contain, as well as how they compare to animal-based sources of nutrition. We'll talk about why humans evolved to thrive on meat, how plants defend themselves with chemical compounds like oxalates, lectins and goitrogens, and what all that means for your health. And I'll share practical tips for how to prepare the least toxic plants safely — when and if you choose to include them in your diet. After struggling with IBS for over 30 years, I fixed my gut issues through a radical shift in how I approached food. It wasn't about chasing superfoods or stacking more supplements. It was about eliminating the things that were holding me back, and embracing the nutrient-dense, low-toxin foods that our ancestors relied on for thousands of years.
