It's a collector's edition honoring a legacy of West African influences into my family's viral sweet potato pie recipes!   Black folks sweet potato pie recipe, old fashioned sweet potato pie, purple sweet potato pie, and Southern sweet potato pie with cream cheese. Which one is your favorite? My favorite is my classic Black folks' sweet potato pie. In the words of my favorite President, Barack Obama, "Yes, we can!"   So, in this sweet potato pie recipe, I'm sharing today, sweetened condensed milk substitutes for evaporated milk. It's my signature Black folk’s sweet potato pie recipe with condensed milk.   What you'll learn in this episode: Which is better, evaporated or condensed milk? This "Black folk tea cake recipe" (that's what they're called!) is an old-fashioned nostalgic Southern soul food treat!  What you'll learn in this episode: What is a Black folks' Southern tea cake? African American tea cakes are a somewhat fancy Southern dessert. Little round cakes. Light, airy, and sometimes compared to soda bread or pound cake.   Tea cakes are typically served with hot tea at gatherings like weddings, christenings, and family events. Or any other pomp and circumstance dress-up occasion (which Black folks love). Are tea cakes African-American? It's believed that enslaved African Americans created tea cakes to reproduce the fluffy European confections that white Americans were accustomed to. African Americans made their own version of tea cakes based on what was available to them with limited baking supplies. What do you serve with tea cakes? Why is the tea cake important to African Americans? Where did tea cakes originate? What are tea cakes made of? What do old-fashioned tea cakes taste like? Something about Southern soul food's slow pace and easy-going nature makes you feel at home.    So when you're hungry, there are some great Southern dishes to try out before settling on a favorite – like Tidewater Virginia chicken yock! What you'll learn in this episode: What kind of food is yock (yok)? Soul food chicken yock is a meal that's an ode to my hometown in coastal Virginia. The Tidewater region, area code 757.  We say two up, two down. Put two fingers up for V, and two fingers down for Ayy – Virginia - VA. (Sound effect - Ayyye!)   If you Google this yock soul food recipe - Tidewater Virginia yock, followed by Norfolk yock, will be at the top of the list!   What is chicken yock food (yock-a-mein)? People also ask, "What is chicken yok?"   Chicken yock is a big bowl of comfort. You may know this dish from its menu names, like New Orleans Old Sober. Or its Chinese derivatives, yak, yok, yock-a-mein (yaka mein), or simply Chinese yock.    What ingredients are in soul food chicken yock? Is yock Chinese food or soul food?   Season one of The Wire cut many folks to the white meat (Sound effect - Mmmm!) when it suggested that yock is not Chinese food and most definitely a soul food dish that Black folks created!   But I tend to think that yock may be soul food and Chinese food combined.    A soup-like dish traditionally made from boiled chicken, noodles, egg, spices, and broth. Then topped with your choice of American ketchup, Chinese soy sauce, or Black folks' favorite – hot sauce! What you'll learn in this episode? What are Black folks' Southern candied yams? Although more sweet than savory, candied yams are a side dish often topped with marshmallows after cooking in a buttery mix of seasonings and spices that elevate this soul food dish to divine perfection!   Are candied yams a Black thing? What is the history of Southern candied yams?   Yams are a vegetable similar to sweet potatoes but come from the motherland in Africa.    Africans were used to cooking with yams. So when they were brought to the American South as enslaved persons, the next best thing available was a sweet potato, which they also called yams. True to Black folks' nature, they took something from nothing and elevated yams to the soul food delicacy many people love and crave today. Black folks' Southern candied yams!
