Cocktail Recipe:In a shaker, pour:1.5 oz gin (Hendrick's preferred)0.5 oz elderflower liqueur (St. Germain preferred)0.75 oz lemongrass simple syrup0.75 oz lemon juice1 dash lavender bitters1 oz egg white (or 1 egg white)shake till foamyadd ice, & shake till coldstrain into glassgarnish with mint or microleafLemongrass simple syrup recipe (makes 12 oz)In a saucepan, over medium heat, mix:1 1/3 cups water1 1/3 cups sugarheat until sugar dissolvesremove outler layer from 2 lemongrass stalkscut off and discard endscut stalks into small piecescombine with sugar mixture in blender & blend until lemon grass is in tiny pieceslet stand for 1 hour, then strain & discard solids (the lemon grass will float, so it's easier to scoop it out first, then strain the remaining liquid)keep refrigerated for a week
