This was not because “my metabolism was high”, this was because I pretty much dieted my whole life. I did every sport you could think of growing up and eventually got into running. The more I ran, the more weight I lost. It got to a point where I was 100 lbs. soaking wet, but still running 10 miles a day (everyday!) and barely eating. This worked for almost 8 years, until it didn’t. After college, I started gaining weight very quickly, despite how much I was running or how little I was eating. I was freaked out! I kept asking myself, “what is going on?! This is so weird, I’m doing everything right!”. I was miserable, exhausted, puffy, tired, hungry, etc. I didn’t know what to do or where to go from here. If you’re here reading this, you might relate.In 2018 I looked into reverse dieting and macro counting and read/listened to everything I could get my hands on to learn what was going on with my body. Eventually, I realized my metabolism had tanked and I needed to eat more and workout less. Who would have thought? This was totally against what society tells us! Within a year, I was able to lose 20 lbs. while eating more and working out less. It was a slow and steady process of gradually increasing calories but thankfully I’m finally at a happy place and have been here for 6 years now (with a few babies in between). Now, I feel amazing, I eat what I want, I’m not exhausted and I have all the energy in the world.I look back now and I am so thankful I had to go through this process because I want to help as many women as I can get out of this dieting rut!!If you feel like you’re undereating or over exercising but gaining weight, don’t worry.. you’re not broken and there is hope. Have a question for a guest or host? This guest sold his business for $50mil to the global company Sigma Alimentos. This company still uses, and used, his recipes to won the 2020 World Championship Cheese Contest with his "flagship cotija cheese."Miguel Leal is widely regarded as the “Godfather of Mexican Cheese” in the United States, Miguel Leal’s story humbly began at a cheese factory in his native Mexico as a teenager. When he was invited to travel to the United States as an apprentice, he jumped at the chance. One of six children raised in poverty after the tragic death of his father in an earthquake, Leal arrived in Wisconsin without money and speaking little English. As an illegal immigrant, he had no choice but to make a cardboard bed on the factory’s boiler room floor.  He was among the first to recognize that the growing number of Latinx immigrants in the U.S. meant there would be a market for specialty Mexican cheeses, and eventually partnered with a master cheesemaker from Wisconsin to work with the Amish in Ohio to produce and hand-sell 60-pound wheels of cotija cheese in the Chicago metro area.  The skyrocketing demand for his cheese led Leal to establish his own company, Mexican Cheese  Producers, Inc. in 1994. He eventually constructed a state-of- the-art production plant in Darlington,  Wisconsin—a prime location with access to the finest quality milk in the country. There, he continued to perfect recipes for a variety of Mexican cheeses and took out patents for the machines used to produce them.
