In this episode we discuss that what you think could be a gluten sensitivity could just be a gluten sensitivity to modern wheat. Einkorn has 14 chromosomes whereas modern wheat has 42 chromosomes. Einkorn wheat is a simple A genome, and modern wheat consists of the A, B, and D genome. Einkorn has a much simpler gluten structure compared to modern wheat. This is what contributes to Einkorn's lower oven spring and lower elasticity. When baking with Einkorn you may need to adjust the hydration and timing of the bulk fermentation. Einkorn's gluten is less complex making it easier to digest. It is higher in protein and less in carbohydrates compared to modern wheat.
Let me introduce you to Einkorn Flour. This incredible flour is the original wheat that started in the Fertile Crescent. This is the only wheat that has never been hybridized. It has a weaker gluten structure compared to modern wheat making it easier to digest. It has a completely different gluten structure compared to modern wheat allowing those that are gluten intolerant to be able to eat it.
