Manny’s life is basically a prep list… If tasks aren’t checked off when they’re supposed to be checked off, that allows for chaos later in the day, running a seasonal, locally-sourced restaurant in the Walker Hotel. Every day is different for Chef Manny, but one thing remains the same: the food, atmosphere and company culture is always top priority.
