Diane Supinski made a believer outta me with her recipe for Sweet Potato Enchiladas. A great vegetarian recipe that you can flex with other vegetables, or even shift it to add in chorizo. And the recipe for the enchilada sauce is a star by itself! I paired with Rogue Ales’ Batsquatch Hazy IPA, a perfect fit. If you can’t get it where you live, try any hazy IPA.
