Description

The recipe is a wonderful amalgamation of spices, herbs, potatoes along with basmati rice. The recipe originated in the kitchen of the nawab of Lucknow Wajid Ali Shah while he was dethroned and exiled to Kolkata. The nawab was a food lover so when he was exiled he also took his kitchen and chefs to Kolkata. Scarcity of money led his Bawarchi to tone down spices and replace portions of meat which was very expensive with potatoes. Later the biryani became famous all around Kolkata.

Ingredients :

Serving: 4 people

1) 1 1/2 cup basmati rice
2) 2 cups water
3) Salt
4) Oil
5) Lemon juice
6) 10-12 baby potatoes
7) 3 onions medium size
8) 1 teaspoon cumin seeds
9) 3 bay leaves
10) 2 cinnamon sticks
11) 2 black cardamom
12) 1-star anise
13) 7-8 cloves
14) 2 tablespoons ginger, grated
15) 2 tablespoons garlic, grated
16) 4-5 green chilies
17) 4-5 tomatoes
18) 1 teaspoon turmeric powder
19) 4 teaspoon coriander powder
20) 4 teaspoons biryani masala
21) 1 teaspoon red chili powder
22) Coriander and mint leaves
23) Mint and coriander leaves
24) Saffron milk
25) Clarified butter
