Today's guest of the Guardian Irish Business Podcast is a fourth generation butcher that has over 140 years experience through his family’s business 'Higgins Butchers', with award-winning dried meats and co-author of the incredible cook book ‘And For Mains”, Rick Higgins.

In the podcast we get to hear about being in the butchers from an early age, having to sign a contract with the Japanese government to be the only official seller of wagyu beef in Ireland and what he is doing to bring the family business into the future.
