I’ll introduce you to some old-world wheats that are making a big comeback and explain why they’re worth experimenting with in your baking. And finally, for our “Slice of History” segment, we’ll time-travel back to ancient Egypt to discover how they baked bread fit for pharaohs. Trust me, it’s not what you might expect! So, whether you’re a seasoned baker or just starting out, whether you prefer a crusty baguette or a pillowy focaccia, you’re in the right place. Let’s break some bread together, shall we? This is “Breaking Bread.” Let’s get this show on the proofing rack! Alright, let’s dive into our first topic: the mysterious world of sourdough starters. I can’t tell you how many times I’ve seen posts in our “Baking Great Bread at Home” group that go something like this: “Help! My sourdough starter isn’t bubbling. Is it dead? Did I kill it? Should I just give up and stick to instant yeast?” First off, let me assure you – you’re not alone. Even experienced bakers sometimes struggle with their starters. The good news is, more often than not, your starter isn’t dead. It might be sleeping, or it might just need a little TLC. Let’s break down the most common issues: 1.Temperature: Your starter is happiest at around 70-80°F (21-27°C). Too cold, and it’ll be sluggish. Too hot, and you might encourage the wrong kind of bacteria. 2.Feeding schedule: Consistency is key. Try feeding your starter twice a day, every 12 hours. Use equal parts flour and water by weight. 3.Flour type: While you can use all-purpose flour, many bakers find that whole wheat or rye flour can give their starters a boost, especially in the beginning. 4.Water quality: If your tap water is heavily chlorinated, try using filtered water instead. 5.Patience: Sometimes, especially when you’re first creating a starter, it can take up to two weeks to really get going. Don’t give up! Now, here’s a tip that’s been a game-changer for many in our community: the pineapple juice trick. When you’re first creating your starter, try replacing the water with unsweetened pineapple juice for the first 3-4 feedings. The acidity helps prevent unwanted bacteria and can give your starter a kickstart. Remember, every starter is unique. It’s a living thing, with its own personality. These include grains like einkorn, emmer, spelt, and Kamut. Now, you might be thinking, “Rachel, why should I bother with these old grains when modern wheat works just fine?” Great question! Here are a few reasons: 1.Flavor: Heritage grains often have more complex, nutty flavors that can add depth to your breads. 2.Nutrition: Many heritage grains are higher in protein, vitamins, and minerals compared to modern wheat varieties. 3.Digestibility: Some people who have trouble digesting modern wheat find they can tolerate heritage grains more easily. 4.Sustainability: Heritage grains often require less water and fewer pesticides to grow, making them a more environmentally friendly choice. Let me share a quick personal story. When I first tried baking with spelt flour, I was blown away by the rich, almost sweet flavor it gave my bread. It was like tasting history in every bite! Now, baking with heritage grains can require some adjustments to your usual recipes. They often absorb water differently and can produce a denser loaf if you’re not careful. But don’t let that discourage you – the learning process is part of the fun! If you’re interested in experimenting with heritage grains, I’d recommend starting with spelt. It’s relatively easy to work with and is becoming more widely available. Try substituting about 25% of the flour in your favorite bread recipe with spelt flour and see how you like it. For those of you who want to dive deeper into this topic, I highly recommend the book “The New Whole Grain Cookbook” by Robin Asbell. You’re relying on your senses and your experience. You’re feeling the dough with your hands, smelling it to judge fermentation, listening to the crackle of the crust as it cools. Our tale begins not in the boiler room of a creepy old school, but in the imagination of horror maestro Wes Craven. The year was 1984, and Craven, apparently not content with the regular ol' monsters that go bump in the night, decided to create a villain that could get you when you're at your most vulnerable – asleep, drooling on your pillow, possibly in embarrassing pajamas. Craven drew inspiration from a series of unusual events. First, he read newspaper articles about young men who died in their sleep while having nightmares. Then, he recalled a childhood incident where a creepy man in a fedora stared at him from the street. Mix these together with a dash of dream logic, a sprinkle of dark humor, and voila! Freddy Krueger was born. It's like a recipe for the world's most terrifying soufflé. In "A Nightmare on Elm Street," we're introduced to Freddy Krueger, a child killer who was burned alive by vengeful parents. But death was just a minor inconvenience for our Fred. He came back as a dream demon, able to stalk and kill teenagers in their dreams. Talk about holding a grudge! Most people just leave a bad Yelp review. Freddy was portrayed by Robert Englund, who brought a perfect mix of menace and macabre humor to the role. Englund's Freddy was like that one uncle at family gatherings who thinks he's hilarious but actually just makes everyone uncomfortable. Except, you know, with more murder. Let's break down the key elements of Freddy's iconic look: The Burned Face: Because nothing says "I'm evil" like looking like an overcooked pizza. The Striped Sweater: Red and green, the colors of Christmas... and apparently, homicidal dream demons. The Fedora: Proving that even serial killers can be fashion-forward. The Glove with Razors: Because regular fingers are just so passé when you're slaughtering teens. The Witty One-Liners: Freddy never met a pun he didn't like, especially if it was related to whoever he just killed. Freddy's modus operandi was simple yet effective. Freddy became a pop culture icon faster than you can say "one, two, Freddy's coming for you." As the series progressed, Freddy's character evolved... or devolved, depending on how you look at it. He became increasingly comedic, his one-liners getting cheesier with each installment. By the later films, he was less a figure of terror and more like the Catskills comedian of the underworld. "I just flew in from Hell, and boy, are my arms tired! No, seriously, I've been slashing all day." Some of Freddy's most memorable moments include: Turning a teenager into a human puppet, complete with visible strings. It was like the world's most horrifying marionette show. Using a Power Glove (remember those?) to control a kid in a video game. Freddy: gamer before it was cool. Becoming a giant snake and swallowing a victim whole. Because sometimes, you just have to go big or go home. Appearing as a demonic version of the TV host Dick Cavett. Proving that even in your dreams, you can't escape bad television. Freddy's popularity led to an inevitable showdown with another horror icon in "Freddy vs. Jason" (2003). It was like the horror movie equivalent of a heavyweight boxing match, if one of the boxers was a dream demon and the other was an unkillable hockey mask enthusiast. But what is it about Freddy that has kept audiences coming back for more? Perhaps it's the primal fear he taps into – the idea that we're not safe even in our dreams. Or maybe it's his twisted sense of humor. After all, who doesn't appreciate a good pun while being eviscerated? Hey! My name is Shaina! Some of you might be asking, "How did she get so bold?" Well to be completely honest, I was in mourning. God was calling me out of a 7 year relationship and I didn't know what was ahead. But then I got to the point where I literally could not imagine doing life on my own anymore. I didn't want to figure it out. I didn't want to move out of my will any longer. I looked up and found myself lost, confused, hurt, and alone. But Jesus swooped in and was like "Nah sis! That's not who I called you to be. I called you worthy. I know who I created you to be. I want to give you beauty for ashes." God just wanted my YES, and it was when I gave Him my YES, that my life began to change. So you might be wondering what this means. What does it mean to give God our YES? What does beauty for ashes look like? You might be thinking, "I believe in God but I just don't know what to do after that." Trust me, I've been there. I'm also still learning and growing in my relationship. (Peep I said relationship not religion). What I do know is that God didn't call us to walk this walk alone. [Isaiah 41:10; Ecclesiastes 4:10; Proverbs 27:17] He never said it would be easy, but it truly is worth it. Join me as we talk about the real! Seriously. Ya'll will leave here knowing a whole lot about me, because through our lessons, we expose the enemy for what he is: A LIAR. A THIEF. The thief come only to steal, kill, and destroy. But Jesus came so that we may have LIFE and have it more abundantly! [John 10:10] So then we apply pressure. This is simply another way to say we are incorporating God's word. Why? Because pressure makes diamonds and God is a refiner. He's in the transformation business! So trade in your ashes for beauty, your mourning for joy, and your despair for praise so we can live this righteous life together! Isaiah 61:3 "To appoint unto them that mourn in Zion, to give unto them beauty for ashes, the oil of joy for mourning, the garment of praise for the spirit of heaviness; that they might be called trees of righteousness, the planting of the Lord, that he might be glorified."

It is often said that what doesn't kill you will make you stronger. Life is a roller coaster, sprinkled with salt and pepper. In this adventure, we also have jolts of free advice and insights on how to take it ahead but when it all comes down to it, story line has its own twists and tales. I have always done what I felt was right. Always followed my heart, and most importantly I don’t have any regrets. Every decision has a story, people judge others with their actions without knowing grassroot story. But nothing could me hold back, I didn't wait for a miracle I believed in being a miracle!
