I can’t believe we’re already onto episode 3 of Uncommon Ramen y’all! Today we will be making one of my favorite cozy winter meals: Thai Yellow Chicken Curry with Potatoes and a Spicy Garlic Butter. Extra virgin olive oil· 3/4-pound baby potatoes, quartered· 1 Yellow onion, chopped· 1 1/2 pounds boneless Chicken breasts, cubed· 2 Tbsp. Thai red curry paste· 2 Tbsp. Yellow curry powder· 1 Tbsp. Thai Seasoning paste· 2 cups canned full-fat Coconut Milk· 2 tsp. Fish sauce· 1/3 cup chopped fresh Cilantro (approx.)· juice of 1 lime· 4 Tbsp. salted butter· 4 cloves garlic, chopped· ¼ tsp. chili flakes (or more if desired)· 2 tsp. honey
