材料》絲瓜(中小)一條、板豆腐1塊、薑1公分長切絲備用、蒜苗5公分(或蒜頭3瓣)、紅蘿蔔半條切絲備用、鹽巴少許、醬油1大匙、太白粉
作法》
1、首先將絲瓜洗淨之後,去皮,對剖之後,再對剖,分成四等分並切大丁
2、豆腐也切大丁備用
3、起油鍋,熱鍋冷油一中匙
4、小火,放入剛備好的一半的薑蒜下鍋爆香
5、放切好的絲瓜入鍋一起煎炒,至絲瓜表面呈現鮮綠色並有點煎過的痕跡
6、再灑點鹽巴調味,拌炒均勻後將絲瓜起鍋裝盤
7、此時鍋中加入一小匙油,放入另一半薑蒜爆香並放入豆腐
8、中火煎炒豆腐2分鐘,火力維持不變,加入醬油1大匙、水2大匙
9、加入紅蘿蔔絲、蓋鍋蓋悶煮2分鐘後,勾薄芡(可視個人口味增減)
10、放入絲瓜一起拌炒均勻,讓絲瓜吸附豆腐的調味
11、試味道,即可裝盤上菜囉!
