Description

Meanwhile in India, the NPCI is preparing a Unified Agent Protocol that would let AI agents make UPI payments on your behalf -- capped at 5,000 rupees per transaction and 15,000 rupees a month, opt-in only, every move logged. — TODAY'S RECIPE —
Goan Bebinca (Queen of Goan Desserts). Whisk 9 egg yolks with 400g sugar until dissolved, then mix in 600ml coconut milk. Sift in 150g all-purpose flour, plus 1/4 tsp grated nutmeg and 1/4 tsp salt, and mix until smooth; strain the batter. Split it into two equal portions -- to one, stir in a tablespoon of sugar caramel for a darker shade (optional). Preheat the oven to200°C (400°F). In a deep 6-inch round pan, add 3 tbsp melted ghee, pour in 1/2 cup of the (dark) batter, and bake 15 minutes. Brush with 1 tbsp ghee, pour in 1/2 cup of the (light) batter, and bake another 12-15 minutes. Repeat -- ghee, then 1/2 cup batter, alternating dark and light -- until all the batter isused, roughly 10-11 layers. Finish with a final brush of ghee on top. Cool completely, ideally overnight in the pan, before unmoulding: warm the pan briefly on the stove or in hot water to loosen it, then turn it out and slice. Traditional Bebinca runs 7 layers and can go up to 16 -- and it's a dish most cooks only perfect after several attempts, so don't be discouraged if yourfirst one isn't picture-perfect. It's especially popular in Goa at Christmas, and for weddings and feasts.
