🍽️ Mama Lucille’s Meatloaf Recipe (courtesy of August)
2-3 lbs. of ground beef
1 package of Jimmy Dean’s Sausage
1 package of Meat Loaf Seasoning (ie; Lawry's, McCormick, etc)
Grated carrots (about ¼ cup or more)
Chopped Onion (about ½ cup)
Crushed saltine or Ritz crackers (1-2 cups)
1 Egg
Garlic Salt, and Black Pepper (to your taste)
6 Pieces of Uncooked Bacon
Mix all the above ingredients except for the bacon with your “clean” hands, and make sure it’s a good consistency, not too sticky, etc., and place in a 9X13 pan. Cover the top of the uncooked meatloaf with strips of bacon. Bake in the oven at 350 degrees for 1 hour or more if the bacon needs to be cooked a little more. Drain the grease and serve. You can adjust the amount and make a smaller pan of meatloaf. Enjoy!
P.S. My (August) brother reminded me to "kick up the oven to 400 degrees for the last 10 min to crisp up the bacon." Also, it tastes great served with Mashed Potatoes. 😋
