Because our cast is made up of teachers and students we have decided to take winter break which means there won't be a regular episode or a Whine & Spirits this week or next.  

However, we felt that, in the spirit of the season and as a celebration of the end of a pretty tough year for everyone, we would make a special episode celebrating the holidays with some songs and skits for you.

Latke Recipe:

• 2 large potato (or replace with 4 large carrots)


• 1 large carrot (optional)


• 1 medium onion


• 1 egg (or 2 for thicker latkes)


• salt (to taste)


• pepper (to taste)


• garlic powder (to taste)


• Vegetable oil


• Apple sauce or sour cream on the side (optional)

1. 
   

   Peel and grate potatoes (and/or carrots) and set aside in a bowl of water to prevent oxidation. This won’t change the taste, but it will make them look better.

   
   


2. 
   

   Cut onion into thin short strings. Place in bowl and set aside.

   
   


3. 
   

   Squeeze water out of the shredded potatoes (and/or carrots) with a kitchen towel and combine with onion, egg, salt, pepper, garlic powder until evenly mixed.

   
   


4. 
   

   Set pan of vegetable oil on stove on medium-high heat until oil shimmers.

   
   


5. 
   

   Form mix into patties and fry until golden brown, flip and repeat and lay out finished product on plate and paper towel to absorb excess oil. Serve hot for best taste.
