Mushroom Ketchup


Mushrooms are asuper food. They add a meaty flavour to dishes and provide a tun ofmacro and micro nutrients. They provide carbs, protein, minerals,fats and fibre. They give you a have a good amount of vitamin D andvitamin C. They are rich in potassium as well. In this case for myrecipe i use Portabella mushrooms which are high in Vitamin B,phosphorus, selenium, copper and potassium.

They also havemagical properties which can vary. Most have healing properties whichscience is just not catching up on. Amanita Muscaria (Fly Agaric) isused for divination, and transformation work. Chaga for healing andgrounding. Reishi for spiritual awareness, healing and relaxation.Shiitaki prosperity, nourishment and growth. Lions mane for psychicability, mental clarity and creativity. Turkey tail healing,protection and balance. There is a tun of varieties and each havetheir own properties.

The mind alteringeffects of Psilocybin mushrooms are now being shown to heal the braindamage caused by PTSD and can help treat certain cancers. Micro andmacro dosing is being done in laboratory settings allowing for thesafety of patients. In these settings they are finding that they helpthe body to heal better than just conventional techniques bythemselves. With these explorations of medicines which ancient andindigenous peoples have used for thousands of years. We may see achange in many medical fields dealing with brain damage, mentalillness, pain and cancer treatments. Mushrooms are also a huge partof nature with networks which span vast areas of the globe if not thewhole planet. Mycelium networks are fascinating structures which worklike neuron and synapses to forests the world over. They deliverinformation, nutrients and act verymuch like a nervous system. Somevarieties of mushroom can be luminescent showing their light in cavesand deep forest groves. Some networks create zombies of insects andanimals. Fungi is are fascinating beings in our world.

The folklore ofmushrooms is as rich and varied as they are. Faerie rings are specialplaces that faeries dance and are considered to be portals to theirrealm. In Slavic areas Fly Agaric are a blessing from Veles the Godof the underworld, earth, waters, and forests. The first mushroomsare gifted to the god as a thank you for the knowledge he gave tothem. In Japan Shiitaki mushrooms are revered for their longevity andhealing properties. Mushrooms are a connecting entity to the othergiving us sight beyond ourselves making them a potent magicalingrdient.

Today I ampreparing mushroom Ketchup. It is a rich earthy meat sauce you canuse just like modern day ketchup. This recipe is my own. Theinspiration for this recipe was from Townsend’s mushroom ketchupfrom the 1700s. I will put a link the notes for you to follow him. Heis a great font of information on colonial America.

The recipe


Mushroom Ketchup

1 pound ofPortabella mushrooms chopped roughly

1/4 onion minced

2 cloves garlicminced

1/2 tsp nutmeg

1 1/2 tsp koshersalt

1/4 cup balsamicvinegar.

1 1/2 cups water


Instructions

Mix all ingredientsin a bowl except the water. Cover with cling wrap and place in yourrefrigerator for 24 hours. The next day place the mixture into youslow cooker for 8 hours with the 1 1/2 cups water. Or boil at a slowroll in a pot for 40 minutes. Let coop strain and boil the liquiddown till it is the thickness you like. It don’t turn thick likemodern ketchup so if you wish it to be that you must add a cornstarchslurry to the water in the last 6 minutes of boiling. Adjust the heatas needed. The strained bits of mushroom and veg can be dried in theoven on 250 for a few ours and then let full dry over night and thenground into a spice topping.
