In today’s episode, we will be interviewing Registered Dietitian and co-founder of EatWell Exchange, Ashley Carter. Ashley earned her Bachelor of Science degree from Florida State University in Dietetics with a minor in Religion and is currently pursuing her Masters in Dietetics with a concentration in Health Informatics. Ashley and Jasmine Westbrook, her co-founder of EatWell Exchange, noticed there needed to be a stronger bridge between nutrition education and cultural competence and as a result started Eatwell Exchange. Eatwell Exchange is a nonprofit organization serving those in the Miami community by emphasizing the importance of their cultural background and providing nutrition education to support their well-being. Today’s student interviewers include Jasmine, Arianny, Tyler, and Jenny.
