On this week's episode, we’re talking to chef Marco Hilton. He was born in Sonora, Mexico and grew up in Tijuana. He has worked as a chef for eight years between Scottsdale and downtown Phoenix. During the pandemic, he was furloughed from his job and that is when he started doing independent pop-ups. He started smoking meats on the 3rd floor of his apartment and that is when 3rd Floor Smoke was born. Together with his team, they focus on Mexican fusion cuisine showcasing their skills learned in professional kitchens and different parts of Mexico.
