Quay, Sydneys Iconic Restaurant, to Close After 37 Years: A Culinary LegacyAfter thirty-seven years, Quay, the renowned restaurant at Circular Quay, will serve its last meal on February fourteenth. Known for its stunning harbor views and groundbreaking food, Quay has been a cornerstone of fine dining in Australia. Starting January first, a special Quay Experience menu will celebrate its culinary legacy. The restaurant, originally Bilsons, was rebranded to Quay in nineteen ninety-nine and became famous for its innovative cuisine and unbeatable views. Executive Chef Peter Gilmore, who led the kitchen since two thousand one, expressed pride in Quays achievements, including earning Three Hats in the Good Food Guide for twenty-three consecutive years. Australian Venue Company will take over the prime location.
