Laura and I talk about how to run 18 hours. Running for Team USA. The power and freedom she feels in ultra running. How she handles the competition. Race nutrition and optimal fueling. The advantages of being a vegan / plant-based athlete: how her recovery time improved after going vegan, and how her immune system improved too!
We talk about her race history, and some of her strong performance as well as a recent European race across 4 countries in which she had an injury flare up at the beginning but persisted nonetheless.
We talk about her career in Duathlons and how she became an athlete (she didn't start until after college.) We talk about run commuting for errands and recipes on her website.
We cover how she gets her sponsors as a vegan athlete.
And so much other fun and interesting stuff!
