Chelsa Smith runs a sourdough micro-bakery out of her home in Des Moines, Iowa. She graduated from The University of Idaho in 2007, right at the beginning of the recession. Her career did not go according to plan, but it was all a part of an even bigger plan that brought her to where she is today. She bakes between 100-150 loaves per week. And, she’s always assessing her preferred level of “good enough.” We want to fly out to Des Moines just to experience her bread…and we just might.
