這一集就來聊聊酒精濃度對風味的影響,這個題目在近年來尤其重要,主要是因為低酒精及無酒精的飲料越來越多,也越來越普及,只是拿掉了酒精之後,原本的風味會往哪個方向發展?
另外,我也談起60%酒精濃度的神祕課題,據說最好的入桶酒精度是60%,又是為什麼呢?
