Plus they’ll be talking to the world’s first vegan Michelin-starred chef and Veganuary ambassador Alexis Gauthier. Alexis talks about his training as a chef, why he wanted to become vegan, and how he transitioned his London restaurant to a fully vegan menu. Alexis’ restaurants are Gauthier Soho and 123V.
