Tali’s Journal 3 - Breaking the Impossibles: First Time Out since Lockdown

Since March 18th when the compound was under lockdown, I finally walked outside of the compound on May the 4th. But today we are told no one is allowed to leave the compound again. I asked myself: when will this lockdown end? It seems that this question is not that important anymore. People always tell themselves a lot of impossibles, but keep breaking these impossibles. So just as a quote says: “Nothing is impossible, the word itself says ‘I’m possible’.” Instagram@taste_tea_taste_life Email: tasteteatastelife@gmail.com

5. Tea Growing Regions 2 - Oolong Tea

Welcome to Taste Tea. Previously, we talked about the growing regions of Green tea, yellow tea and white tea. Just in time, Taste Tea Podcast received a question from a listener from Germany. This listener shared that he likes oolong tea and hopes to get some recommendations about oolong teas. When I heard this question, I was very excited, so I shared 4 types of oolong teas with him. In this episode, I will elaborate on the answer I had for this listener and introduce the growing areas of oolong tea and its distinctive tea varieties. Without further ado, let’s start this journey of tea tasting. According to the growing origins, oolong teas can be divided into: Northern Fujian oolong (闽北乌龙茶), Southern Fujian oolong (闽南乌龙茶), Guangdong oolong (广东乌龙茶) and Taiwan oolong (台湾乌龙茶), of these, oolong tea from Fujian has the largest production.  For more detailed information, please refer to the shared notes below:  https://docs.google.com/document/d/1tfJwvFAYxfGMWSNx-JUBmw4iDbtMqqZ-R78wiSk2UcQ/edit?usp=sharing  Reference links:  Northern Fujian oolong:  https://www.puretaiwantea.com/china-wuyi-narcissus-oolong-tea  https://www.teavivre.com/info/four-famous-firs-of-wuyi.html  Southern Fujian Oolong:  https://www.puercn.com/wulongcha/zhishi/159429.html  https://www.puer10000.com/chalei/123596.html  Guangdong Oolong:  https://www.163.com/dy/article/GLKD5N1J0552HOHQ.html  https://serenetea-cha.com/blogs/news/what-is-phoenix-dan-cong-oolong-tea  Taiwan Oolong:  https://www.puercn.com/zhishi/44163/  Instagram@taste_tea_taste_life  Email: tasteteatastelife@gmail.com

4. Tea Growing Regions 1

This episode will introduce the famous tea varieties and their growing regions in Green tea, Yellow tea and White tea. Without further ado, let’s get into it! Green tea: There are many regions growing and producing Green tea including Zhejiang, Guizhou, Henan, Jiangsu, Jiangxi, Sichuan, Hubei, Hunan, Fujian, etc. The following is a brief introduction to the three types of famous green teas in China and their growing origins. Longjing Tea/ Dragon Well tea (龙井茶): It is widely cultivated in Zhejiang province, and mainly has three growing areas, West Lake, Qiantang and Yuezhou, but the tea grows and processes in West Lake area still has the highest quality of all. According to the record from Hangzhou Xihu Longjing Tea Industry Association, except for the tea cultivated within the 168 square kilometers of West Lake production area that can be called West Lake Longjing; the tea growing in other two areas, Qiangtang and Yuezhou, are commonly known as Zhejiang Longjing tea or Qiantang Longjing and Yuezhou Longjing. Other two well-known green teas are, Xinyang Maojian (信阳毛尖), mainly produced in Xinyang city of Henan province, and Biluochun (碧螺春), mainly produced in East Dongting Mountain and West Dongting Mountain in Wuzhong District, Suzhou, Jiangsu Province, so it is also called Dongting Biluochun (洞庭碧螺春). Yellow tea: The six major producing areas of Yellow tea are Hunan, Hubei, Sichuan, Anhui, Zhejiang and Guangdong provinces. Among them, Hunan province is known as the "Hometown of Yellow Tea in China". Famous yellow teas include Junshan Silver Needle (君山银针) from Junshan Island at Dongting Lake, Hunan Province, Mengding Huangya (蒙顶黄芽) from Mengding Mountain in Ya'an City of Sichuan Province, and Huoshan Huangya (霍山黄芽) from Huoshan County of Anhui Province. White tea: There is a saying: “World's white tea is in China, and China's white tea is in Fujian.” Yes, Chinese white tea is mainly cultivated in Fuding, Zhenghe, Jianyang, Songxi and other counties in Fujian Province; Taiwan also produces some white tea locally. Some famous white tea varieties are Baihao Yinzhen aka White Hair Silver Needle (白毫银针) from Fuding, and White Peony (白牡丹) and Gongmei (贡眉) from Jianyang. I love tasting white teas and have always wanted to visit Fuding, so, in 2020, I went to this place. After trying several teas, I picked one and mailed the white tea cakes to my family, friends and coworkers to taste it together. Fuding is not a busy city, rather a small town. Not as sophisticated as the people living in the big cities, you could feel the simple and kind connection among the local people. After hearing all these places mentioned in this episode, do you also feel like to go to a tea field and breath some fresh air? Then start planning for the trip, and when the time has come, you are ready to go. It is such a lovely and exciting thing just by having the thought of it. There are also reference links in the show notes for you to take a look if you would like to learn more about this topic. Looking forward to the next we when we are tasting tea and tasting life together. See ya next time. 3.

3. Tea and Qingming Festival

Recently I got to taste tea with my flat mate, Jia. It is a Taiwan oolong tea ordered on Taobao, and Taiwan is famous for producing high quality oolong teas. As Jia described, this oolong tea really has a smooth soy milk flavor. Actually, I didn’t expect that we could order a good tea from Taobao without seeing and tasting the tea first. To me, having tea while talking with someone during this lockdown, really is something so comforting and pleasant. Today also is the Qingming Festival known as Tomb Sweeping Day. Qingming Festival is the 15th day after Vernal Equinox (春分), which is one of Chinese 24 solar terms. This day is for people to not only honor the ancestors and people who passed away, but also take time to go out and enjoy the spring time. Even though, it seems that it is not quite possible to go out at this moment, we can still have some tea with us. Now is the time to harvest Ming Qian tea (明前茶), namely Pre-Qingming tea, the tea being plucked and processed around Qingming Festival. These teas are mostly fresh buds with rich aroma and nutrients. Therefore, the quality is high and they are considered the top-grade tea. However, since the temperature is generally low before Qingming Festival, and limited amount of buds could meet the standard to be plucked, so these buds are the previous ones and the price for the pre-qingming teas is higher. Tea merchants also like to describe their teas as Pre-Qingming tea to indicate they are the good tea. So don’t be fooled by the appearance or the marketing techniques, I suggest my listeners and myself to get to know more about tea before buying one, then it’s going to help us find that cup of tea we really like. 2.

Email:tasteteatastelife@gmail.com Anchor: https://anchor.fm/tali01

2. The basic processing methods of 6 categories of Chinese tea

6 categories of tea and their basic processing methods from low to high degree of fermentation: 1. Green tea: There are 3 basic steps to processing green tea, fixation, rolling, and drying, and fixation is an important step to form the shape of the tea leaves and ensure the quality of the tea. 2. Yellow tea: The processing of yellow tea is similar to green tea. Only one step is added to the process that is sweltering. The production process can be divided into 4 stages: fixation, rolling, drying and sweltering. Sweltering will be done after fixation, rolling or drying. 3. White tea: There are the least steps to process white tea, withering and drying. The key lies in the step of withering, which forms the special taste and the quality of white tea. 4. Oolong tea: The steps to process oolong tea are withering, laying, stir fixation, rolling and drying. Of these, laying is the key step to give the tea its special aroma and the distinguishing “green leaf with red edge” feature Black tea: Steps to process black tea are withering, rolling, fermentation and drying. Of these, fermentation is the soul of black tea processing. The purpose of fermenting the tea leaves is to develop the color, aroma and taste of black tea. 6. Dark tea: The processing of dark tea generally includes 4 stages fixation, rolling, piling and drying, of which piling is a kind of fermentation process and the key to determine the quality of the ripened tea in dark tea So these are the processing methods for the 6 types of Chinese tea. If you have anything you would like to know, feel something is not accurate, or any question and feedback, you are welcomed to reach me. Below are the ways to contact me. 1.

1. Categories of Chinese Tea

There are 6+1 categories of Chinese tea. According to the processing methods and the degree of oxidation (fermentation) of tea polyphenols, Chinese tea can be divided into green tea (unfermented tea), white tea (slightly fermented tea), yellow tea (lightly fermented tea), oolong tea (semi-fermented tea), black tea (full fermented tea) and dark tea (post-fermented tea); these six major tea categories.
