I discuss the omega 6 polyunsaturated fatty acid linoleic acid, which occurs in all the vegetable seed oils. Linoleic acid is ubiquitous in the typical western diet and found in virtually all processed foods. I discuss the biochemistry underpinning its toxic and inflammatory effects and the pathological implications. Topics include ceramide accumulation and how linoleic acid stimulates adipocyte hypertrophy and mitochondrial dysfunction mediated by cardiolipin oxidation and by oxidative breakdown products such as 4-HNE.
